Check out this Norwegian snack called lefse. It is a kind of potato based flatbread that dates back to 1750 when potatoes were first introduced to Norway. However, some say that today’s lefse was inspired by a kind of cracker that was made centuries ago and eaten by the Vikings! The cracker was made with flour and could be dried and kept all winter in wooden boxes. When they were hungry, a Viking could just grab a cracker, soak it in water to soften it up, and be on their way! Today, there is a large population of people in Minnesota who are of Norwegian descent (called Norwegian Minnesotans) still making and eating lefse! They especially love to have lefse around the holidays. Butter is popular as a topping on lefse along with sugar, cinnamon, peanut butter, jam, smoked salmon…just about anything you like! Usually a topping is spread on top and the lefse is rolled up and ready to go!
