Akutaq (pronounced AUK-goo-duck) is a dessert traditionally made by the Indigenous people of Alaska and Northern Canada. ❄🌎🐻🐳 It is called “Eskimo Ice Cream” by non-natives. Akutaq is a Yup’ik (the most common language spoken by Alaskan Natives) word meaning “something mixed”. And that is exactly what akutaq is…a mix of fat and berries. Actually, not just berries. There is also a savory version using fish and meat. Instead of animal fat, Natives generally use Crisco now because it is easier to find. They add their favorite ingredients, like salmonberries, blueberries or raspberries and whip by hand until smooth and fluffy. Snow can also be added to the mix! Click here for the recipe card.
